CUISINE

Cuisine is specific set of cooking traditions and practices utilized in the preparation of food.  I base my cuisine on the adage that variety is the spice of life.  In todays fast paced and hectic society meal planning and nutrition have become afterthoughts.  With every meal I plan careful consideration is given to nutritional content, balance, portion size and above all taste.

Pre-pared Dinners features rustic American favorites, that emphasize great taste and adequate portions, assembled into cutomizable weekly or bi-weekly meal plans.  American cuisine is a melting pot of the major cuisines of the world.  Every region in America has a distinct culinary variation based on ingredient availability and its immigrant community.  The blending of these ethnic and regional styles offer possibilites only as limitless as our imagination.

The Business Supper, Dinnertaining and Intimate Evening Escape include menu selections from French and French Carribean cuisines.

French Cuisine involves a great number of techniques, some extremely complicated such as  the mastery of rich sauces, the fundamental backbone the of this style of cooking.   Tarragon, mustard, chive, chervil and shallots are ethnic flavors found throughout the regions of France.  Fruits and vegetables are used liberally in meals, often complementing seafood and or red meat another staple of the french diet.  Despite the use of butter, wine, full-fat cheese, and of course decadent desserts the French are considered one of the healthiest populations in the world.

The cuisine of the Carribean is a fusion of French, Spanish, African, Indian and American Indian culinary heritage.  Most commonly known for its jerk seasoned meat, spicey hot flavors in addition to an abundance of fresh fish, beans and vegetables.

The combination of the two cuisines allow for an elegant gourmet menu for any occassion.
